Strip the housing off and a crane remote is very simple. The transmitter — the handheld belly box — sends short digital packets on a license-free radio band. The receiver, bolted into the crane or hoist control panel, listens only for packets carrying its own address, and closes a relay contact for every command it recognizes. Those relay contacts sit in parallel with, or in place of, the buttons on the old wired pendant station that used to dangle from the crane on a rubber cable.
That single sentence explains the three things people get wrong. Pairing exists because the address is the only thing keeping the hoist in the next bay from answering your buttons; a receiver that has lost its pairing is deaf, not broken. Control voltage matters because the receiver's relays are switching whatever the pendant was switching — commonly 24, 110 or 220 volts AC — so the receiver has to be fed and rated for the panel it is going into. And the red mushroom head is not a feature, it is the point: an emergency stop on a properly built industrial remote drops the contacts, it does not politely ask software to stop.
